This recipe for crispy bacon and asparagus rolls is very simple and quick to make.
First, wash the asparagus under running water, transfer it to a cutting board and remove the hardest and most fibrous part of the stem. In a 28 cm non-stick saucepan, bring water to a boil, salt the water lightly, and boil the trimmed asparagus for about 10 minutes. Drain and set aside.
Wrap two slices of bacon around each asparagus, making sure it's wrapped well. Place the bacon-wrapped asparagus on a shallow non-stick baking sheet lightly drizzled with extra virgin olive oil. Preheat the oven to 200 °C (392 °F) and cook for 10 minutes, or until the bacon is crispy.
