Mother's Day recipe: simple butterless strawberry cake

In this article, we share a quick and very easy recipe that's ideal even for those who are less experienced in the kitchen. This recipe is a fluffy strawberry cake, a dessert that's sure to impress and can be whipped up in almost no time, made with the quintessential seasonal fruit.
Our recipe is butter-free and uses very little sugar.

Butterless strawberry cake: ingredients for a 22 cm diameter cake
- 200 g 00-type flour
- 2 medium eggs
- 250 g strawberries
- 50 ml sunflower oil
- 150 g granulated sugar
- 150 ml of whole milk (or almond milk)
- 10 g baking powder
- 1 teaspoon of vanilla extract or 1 g of vanilla powder
- 1 pinch of salt
- lemon juice (as needed)
- powdered sugar (as needed)
- a few mint leaves (optional)
Directions
Sift the flour and baking powder into a bowl. Clean the strawberries well and cut them into small pieces. Place the chopped strawberries in a cup or on a saucer and sprinkle them with a few drops of lemon juice.
In another bowl, beat the eggs with the sugar until the mixture is frothy. Add the milk and oil, continuing to mix at a medium speed, then gradually add the flour and baking powder mixture followed by the vanilla, until it forms a smooth batter. Add a pinch of salt.
Pour half of the mixture into a lightly floured 22 cm non-stick cake pan and add half of the strawberries. Pour in the remaining mixture and add the rest of the strawberries.
Bake in a preheated oven at 180°C for about 40 minutes. Test with a toothpick to confirm if it's fully cooked: the cake is done when the toothpick is dry.
Once the cake is done, remove it from the oven and let it cool, then sprinkle the top with the powdered sugar. Garnish with two strawberries cut in half and a few mint leaves.
