  • 1 bunch of agretti (about 300 g)
  • 4 eggs
  • 3 tablespoons grated Parmigiano Reggiano cheese
  • extra virgin olive oil (as needed)
  • a knob of butter (optional)
  • salt (to taste)

Directions

First, clean the agretti, cutting the stems and setting aside the grassy leaves. Remove any foreign objects, place in a colander and rinse thoroughly with cold water.

In a non-stick saucepan, bring about 1.5 liters of water to a boil, then add the agretti and cook until they soften.

Break the eggs into a bowl, add the grated Parmigiano Reggiano cheese, a pinch of salt and a drop of extra virgin olive oil, and mix by hand with a whisk. Drain the agretti well and add them to the mixture.

Grease a 24 cm non-stick pan with a knob of butter or a drizzle of oil, pour in the mixture, and cook both sides well over low heat, turning the frittata over with the help of a lid.

Once ready, transfer it to a serving dish, cut it into wedges, and serve.
